The finalists have been chosen: Sustainable Chef Challenge returns for the third time from 11 to 15 November
For the third time, chefs from around the world are competing in the Sustainable Chef Challenge. Under the motto ‘Cook for Change’, Sodexo and Rational are looking for the best sustainable dish.
In the preliminary phase, eight Sodexo chefs beat off competition from more than 300 applicants from 30 countries: Sandrine Leriche (France), Michal Fabiszewski (Poland), Adam Collison (UK and Ireland), Gaurav Pawar (India), Ryan Hickey (USA), John Oliveira da Conceicao (Brazil), Christopher Paredes (Chile) and Nabila Kerbout (Morocco). From 11 to 15 November, they will present their creations to the expert jury at the final in Paris. To win the title, the dishes not only have to taste good, but they also must be 100% plant-based, made from sustainable ingredients and avoid food waste. Additional points will be awarded for creativity, financial viability, skills and techniques, among other things.
Martin Wolf, Segment Director Catering at Rational: “With the Sustainable Chef Challenge, we want to show how diverse sustainable nutrition can be. We are delighted to be able to contribute to this with our cooking systems, the iCombi Pro combi-steamer and the iVario Pro technologically advanced bratt pan.”
