Matthew comments, “There used to be twenty 10-litre stock pans, trying to pick them up safely without burning, or pouring hot stock on your feet and the mess that it makes. Nowadays, I press a button on the iVario and it tips up, the stock pours out. There’s no danger involved, there’s no mess involved. Honestly, it just saves us so much time. You know, as someone who’s always made stocks and sauces to be able to do so in that environment, with that amount of control and that amount of consistency, to deliver a product that’s just what I want in the way I think it should be done, it’s an absolute game changer. ”
